Spicy Quinoa Bowl
Ingredients list
For 1 serving:
- 75 grams of quinoa
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Gelatinized Maca Powder
- 1 tablespoon Goji Berries
- 1/2 avocado, sliced
- 1 handful of spinach or kale
- 1 tablespoon roasted pumpkin seeds or sunflower seeds
- 1/2 teaspoon olive oil
- 1 pinch of salt and pepper to taste
Preparation method
- Cook the quinoa according to the instructions on the package. Add the turmeric powder during cooking, so that the quinoa gets a rich flavor and color.
- In a small bowl, mix the gelatinized maca powder with a small dash of water to form a smooth paste. Stir this into the cooked quinoa once it is done.
- Place the quinoa in a bowl and add the spinach or kale.
- Garnish with the avocado slices, goji berries and roasted pumpkin seeds.
- Sprinkle with olive oil and add salt and pepper to taste.
- Serve warm or lukewarm and enjoy this spicy, nutritious quinoa bowl!
